Preheat oven to 350 degrees F with rack in the center. Grease a 9x13 in glass baking dish.
Peel and core apples and largely dice them. Set aside.
In a large bowl, whisk together flour, sugar, salt, baking soda, baking powder, cinnamon, and nutmeg.
In a medium bowl, whisk together orange juice, eggs, milk, and vegetable oil. Pour into dry ingredients and fold until streaks of flour remain, then add apples, and continue folding until combined. Don't overmix.
In a medium bowl, mix together brown sugar, butter, flour, chopped walnuts, pumpkin spice, and cinnamon until large crumbs form. Sprinkle over batter.
Bake the cake for approx. 50 min or until golden brown and a toothpick inserted in the center of the cake (not the brown sugar swirl) comes out with a few moist crumbs. Let cool for a bit before drizzling on the glaze. Enjoy!
For the glaze, whisk together powdered sugar, milk, and vanilla until smooth and silky.
This is soooo good…a great seasonal dessert/breakfast, but really, can be made any time of the year.
