Grandma’s Apple Crisp

One of the things my grandma does faithfully every time we visit her in Odanah colony is make her delicious apple crisp for us. At three o’clock it’s always ready to be enjoyed and is such a treat. (with a large scoop of vanilla ice cream, of course 😉 Grandma has a few amazing recipes that she enjoys making for us when we’re there, this apple crisp included. The apples are tender and thicken beautifully and the crumble is crisp with hints of cinnamon. Grandma's Apple Crisp
 
This apple crisp has tender apples and a crisp crumble with hints of cinnamon.
Ingredients
  • Crumble:
  • 1 cup old-fashioned oats
  • ¾ cup all purpose flour (I do half whole wheat)
  • ½ cup brown sugar
  • 1 tsp cinnamon
  • ½ cup cold butter
  • Apple Filling:
  • 4-5 cups apples, peeled and largely diced.
  • ½ cup granulated sugar
  • 1 cup water
  • 1 tsp vanilla
  • 2 Tbsp cornstarch
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, combine all crumble ingredients except butter. Then, cut in butter and incorporate with a pastry cutter, your hands, or a fork until large crumbs form. Press half of the crumble on the bottom and up the sides of a 9-in pie plate.
  3. In a large saucepan over medium heat, combine apples, sugar, and water and cook until the apples are soft.
  4. With the heat still on, add vanilla extract and mix cornstarch with just enough water to form a smooth paste. Add that to the apple mixture and cook and stir for a few more seconds until it starts to thicken.
  5. Pour the apple filling over the crumble in the pie plate and sprinkle the remaining crumbs over it.
  6. Place the apple crisp on a parchment lined baking sheet to catch any drips and bake in preheated oven for 40-50 minutes until bubbly and golden brown. Let cool a bit to set then serve warm with vanilla ice cream if you wish. 🙂

A double batch of this amazing apple crisp cooling on the counter right now! It isn’t the first time I’ve made it for my family and won’t be the last either. 😊 I do make a few minor modifications, though. I like to add a squeeze of lemon or orange juice and cinnamon to the filling. I also have found that the filling needs much less sugar than the recipe calls for. Thanks, Denae, for this great recipe!!
