Glazed Meatloaf Recipe
This glazed, tender meatloaf is so flavorful, and that sweet and tangy glaze takes it over the top. ย During the photo shoot it was almost torture taking pictures of that JUICY meat and having to wait to dig in. ๐ ย The dipping glaze on the side is a must. Its depth of flavor gives the meatloafย a satisfying, complete taste. The first time I made this meatloaf, our visitor from SD declared it was the best meatloaf he’s ever had. How’s that for a compliment? ๐

Glazed Meatloaf Recipe
This meatloaf is moist and flavorful, with a sweet and tangy glaze that makes it even better! Pairs well with mashed potatoes and gravy and peas, or rice.
Serves: Makes 1 meatloaf
Ingredients
- Glaze:
- 1 cup ketchup
- ¼ cup packed brown sugar
- 2½ Tbsp apple cider vinegar
- ½ tsp Tobasco or Siracha sauce
- Meatloaf:
- 2 tsp vegetable or canola oil to saute
- 1 small or ½ large onion, diced
- 1½ garlic cloves, pressed/minced
- ⅔ cup crushed saltine crackers or bread crumbs
- ⅓ cup whole milk
- 1 pound 90% lean ground beef
- 1 pound ground pork, turkey, or beef
- 2 large eggs plus 1 large yolk
- 2 tsp Dijon or regular mustard
- 2 tsp Worcestershire sauce
- ½ tsp dried thyme
- ⅓ cup finely chopped fresh parsley or 1 Tbsp dry
- 1 tsp salt
- ¾ tsp pepper
Instructions
- Whisk all the glaze ingredients together in a small saucepan on low/medium heat until sugar dissolves. (if you're sugar doesn't need to be dissolved, skip this step)
- Reserve ¼ cup glaze mixture in a small bowl and simmer the remaining glaze for 15-20 min until slightly thickened and reduced. Cover and keep warm.
- Line a rimmed baking sheet with foil and spray lightly with cooking spray. Preheat oven to 350 degrees F.
- Heat oil in a non-stick skillet over medium heat until hot and shimmering. Add onions and cook until softened and golden. Add the pressed garlic cloves and cook until fragrant.Transfer to a large bowl.
- Process the saltines/breadcrumbs and milk in a food processor until smooth. Add the beef and pork/beef/turkey and pulse until well combined. (you could also do this part by hand, although the beef and saltine/breadcrumbs won't be as well mixed)
- Transfer the meat mixture to the bowl with the cooled onion mixture. Add the eggs and yolk, mustard, Worcestershire sauce, thyme, parsley, 1 tsp salt and ¾ tsp pepper and mix with your hands until well combined.
- Transfer the meat mixture to your prepared baking sheet and shape into a 9 in by 5 in loaf.
- Adjust oven racks to to the upper racks (about 4 inches away from broiler elements) and heat broiler. Broil on the upper rack until well browned, about 5 min. Brush 2 tablespoons of the reserved, uncooked glaze on the top and sides of the meatloaf and broil for another 2 min.
- Adjust oven racks to the middle and heat oven to 350 again. Brush the meatloaf with the remaining reserved glaze and bake for 40 min or so until juices run clear and cooked through.
- Remove meatloaf from oven and tent/cover with foil and let it rest for 20 min.
- Slice and serve with sauce. Enjoy!
I’ve never used a recipe for meatloaf but I’ll have to try this๐๐ looks yum!
